BELLA HOME MADE CHICKEN BURGER - easy cooking

Not a fan of fast foods! But I treat my family with my very own home made ones. Remember, its healthy eaten that matters. So this morning I would share with you guys how to make chicken burger.

This is what I put in Ace’s food pack for breakfast and he loves. Yes, he takes food to work. He usually says when he is eating in their common room, friends often ask where he buys his food. He tells them, my wife cooks them. They will be like NO WAY! I am happy my foods are appreciated * wink *

So here are the steps to making chicken burger

Thing you will need

spring onions
Onions
crushed garlic
cucumber and tomatoes sliced.

1 kg of Chicken breast
4 medium Garlics – crushed into paste
1 Knorr cube
½ Onions – chopped into cubes
1 cup Spring onions sliced
1 tablespoon of Flour
2 Tomatoes sliced
½ medium Cucumber sliced
Olive oil
Burger buns
2 mediums sized Irish potatoes


1.  Cut the chicken into tiny cubes.  By holding the knife with two hands, chop the chicken into tiny piece until minced.

2.  Once done, add the Knorr cube, garlic, onions, spring onions and flour.

3.  Mix together and set aside while you preps the potatoes and veg * all should be ready at the same time *

4.  Peel out the potato skin, cut into chunky chips and fry them. put aside

5. Slice the burger buns, set aside

6. Divide the chicken mix into 6 portions and shape it portion into a burger shape

7.  In a grill frying pan or frying pan, pour in a teaspoon of olive oil and heat up

8.  Then add the burgers and fry for approximately 6 minutes on each side, or until golden-brown all over and completely cooked through.




9.  To serve, place the sliced buns into the grill pan and toast. place the cucumber and tomato slices onto one side of each burger bun, top with a burger and a dollop of mayonnaise, then add the lids to the buns. Serve on plates with a portion of chips alongside.

NB: you can still serve with any addition thing you wish such as lettuce, cheese etc.

PUFF PUFF WITH PEPPER.

Today was a very sunny day. I went about my normal Saturday shopping, In fact by the time I got back, I knew I have dropped a few pounds. Chei, I bought the ones on my list…the market! ...I just don’t know why I can’t stick to budgets.

Entering the house, my heart was full of unspeakable joy. Hubby has hovered, cleaned and arranged the whole house and had carried our little prince out with him for a walk. I dropped the carriage bags and I just screamed, God thank you for blessing me with this man. Yes, I am blessed!

After unpacking and arranging the foodstuffs, I thought I needed to make my man happy once he gets back. He called to say they would be staying longer that David is having fun. Then it hit me, boom! The best thing to make for him is puff puff with pepper. Yes!!! He loves it and he will wear smile like a garment all through today * wink *.

So here are the steps to making these puffs.


1.  In a bowl, sieve in 2¼ cups of flour, ½ cup of sugar, 1 teaspoon of yeast.

2.  Add 1 teaspoon of nutmeg

3.  Add 370 ml of warm water and mix until mixture is smooth and consistent.

4.  Cover the bowl with a foil and a kitchen towel and pop into an oven or an airtight cupboard. This causes the yeast to act fast.

5.  Allow for a about 30 – 45 mins or even an hour, depending on the type of yeast used

6.  After the time has elapsed, bring out the bowl and you will notice the mixture is kinda bubbly and is raised too. then cut in your pepper and turn the mixture.

7.  In a frying pot, you can use a deep pot pour in the oil.

8.  Allow the oil to heat up, scoop in small mixture for test frying – to know if the oil is hot enough.

9.  If the oil is hot hot, the scoop in bits by bit and allow to cook and brown. Please when you notice the oil is become too hot reduce the gas heat.

EGG-FRIED RICE - The way you love it!




Egg-Fried Rice with bbq chicken
2012, new target! Just like any other person, I set target for myself as per weight issues. At the end of the target month, nothing tangible was achieved.  And I wondered y? I do my exercises, I walk, I climb stairs… what have I not done; yet this baby weight has definitely refused to vanish.

I was moaning to myself about the headache of this weight burden and a friend said to me in class, “Belle, how can you lose weight when you cook all these nice foodies, not possible my friend” and it just hit me hard, yes! This is it…
  
Food! Food!! Food!!! I love cooking. I remember those years of living with my “dee m n’aka manager” @Zitera, she used to set targets for herself and still does, you know. But by the time she gets back from work and dinner served * very little portion she usually asked for * but she ends up eating more than required. She will be like, Belle please stop cooking this delicacies but how will I ever stop? I MISS THOSE YEARS!

Now, I try to remain fit by eating healthy… Healthy Living – cutting down weight while enjoying very good food. So, I got this new target for 2012 – the preparation of healthy weight lost tasty foods.

I have loads of recipes to share on Healthy tasty foods this 2012. Today, I would be sharing with you guys my very own recipe for Egg-Fried Rice with barbecued chicken. This particular fried rice is the best I have ever cooked. The way we ate it, I could only wonder, if I would ever meet my targeted weight, because what matters in weight lose is the amount of food we eat – quantity. Here comes the process for the preparation of this Egg-Fried Rice:


INGREDIENTS

  • 1 and 1/2 cups of Basmati rice (any other rice can do)
  • Sunflower oil or vegetable oil
  • 4 cubes of Knorr
  • Eggs
  • Spring onions
  • Onions
  • Red pepper
  • Pepper
  • Soy sauce
  • 1 stick of carrot (depending on the amount of rice)
  • Curry
  • Thyme
  • Garlic
  • Peas
  • Chicken or beef
  • Garlic and ginger
  • Heinz Barbecue mix








Preparations

Rice: to be prepared first because we wan the rice to be loose


Wash the Basmati rice, sieve and set aside
In a medium pot, pour in water and bring to boiling
Pour the rice in and the water level should be a little above the rice level
Put in a cube of Knorr and a tablespoon of curry, again this depends on the amount of rice and how yellow you want it…
Then reduce the gas heat to the lowest and allow cooking
Stir for like every 5 mins so to be sure the heat reaches all the rice. * am rubbish with keeping time while cooking *
Once you are convinced the rice is cooked to your satisfaction and the water dried, turn off the gas.
In a large sieve or a big bowl, transfer the rice and allow cooling.
* Make sure you spread them out to allow cooling fast and avoid sticking together *
If you are using normal rice, cook like you usually do but make sure the rice doesn't suck too much water...we need it loose, not too stick for perfect result.
Set aside.

Meat:

In a pot, put in your meat and spice it with the curry, thyme, and 2 cubes of Knorr. 
Add very little water and cook.
Once done, drain the water and rob the bbq mix on the chicken
Set in the oven and grill (I love using my halogen oven)
Grill until the skin is crispy.



Fried rice preps

Cut the carrot, spring onion, pepper and red pepper.
Roughly chop the onions
Crack in the eggs into a bowl and spice with half the Knorr
Then fry.
Once done, roughly chop it too.

In a frying pot or a pot, put in a table spoon of sunflower oil
When the oil is hot, put in the onions, pepper and spring onions 
Add the remaining half cube of Knorr
Followed by the carrot, peas and red pepper
Stir fry for about 2 mins and transfer the veg in a plate

In the same pot, pour in a tablespoon of sunflower oil
Allow to heat up and pour in the rice and add a tablespoon of soy sauce
Stir fry, once the rice is heated up
Add the veg and the fried egg
Stir so all gets hot and your egg-fried rice is ready.
Serve with the bbq chicken









 if you noticed, i used no salt. the maggi contains enough salt already. try reducing the amount of salt intake, too much of it is unhealthy.
